Plant-based overnight oats recipe

I came across the overnight oats recipe a few times now and thought I would give it a go. I would say the only difficulty of this breakfast is that you have to prepare it the night before. I’ve used the ingredients I had in the cupboard, feel free to make it your own by adding or swapping some ingredients. But not the oats. Obviously.

Ingredients

1 serving

  • 4 dried apricots
  • 1 cup (80g) rolled oats
  • 1 tsp chia seeds
  • 1 cup (225ml)  plant milk
  • 1 tbsp dried goji berries
  • 1 tbsp mixed fruits
  • 1 tbsp cacao nibs

Method

Chop the apricots and mix with the remaining ingredients in a container. Stir. Close the lid and let it sit overnight in the fridge to soak.
