Possibly the best pistachio ice cream you will ever have.

Ingredients

12 servings

100g pistachio nut kernel (or butter)

400ml coconut milk canned

100g caster sugar

3 cardamon pods, bashed

Method

  1. Add the kernels to a powerful food processor until a very fine or smooth paste.
  2. Add all the ingredients into a saucepan, simmer for about 10 minutes, and remove the cardamon pods.
  3. Let the mix cool for a little while.
  4. If you have an ice cream machine, pour the mix into it. If not, pour it into an ice cube tray and freeze. Once frozen, remove from the ice cube tray and blend in a food processor to make the ice cream texture. You may need to re-freeze this once blended, depending on the strength of your blender.
