RECIPE HIGHLIGHTS

This recipe took me by surprise as it only contains apples (compote) as a wet ingredient. But it worked like a charm. I’ve cut it in 6 which made generous portions. It would feed 8 to 10 people esaily.

Ingredients

6 servings

250g flour

200g caster sugar

1 tbsp cornflour

2 tsp bicarbonate of sodium

1 pinch salt

1 tsp ground cinnamon

50g cacao powder

500g apple compote, unsweetened

2 apples diced

Method

1- Preheat the oven to 160. Grease a 25cm square tin (I’ve used a round one)  with vegan butter.

2- Mix all the dry ingredients together.

3- Add the apple compote and mix gently.

4- Add the diced apple and give it a good mix.

5- Put in the tin and bake for an hour.

6- Remove from the oven and wait 20 minutes before removing it from the tin.

I have a bad habit of having brioche rolls chocolate chips for breakfast. Which 1- isn’t plant-based and 2- wasn’t going to get well with my cutting off sugar challenge. I did some research and pancakes looked to be a good option. I did remove the sugar from the recipe and added some blueberries (10 grams) per pancake.
