For the base
Healthier Pizza Dough

For the topping
140g firm smoked tofu
200g shiitake mushrooms
1 green pepper
3 spring onions
12 cherry tomatoes
80g tinned sweetcorn
4tbsp BBQ sauce
Chilli flakes, to taste

For the tofu & mushroom rub
½tbsp olive oil
½tbsp smoked paprika
¼tsp garlic powder
¼tsp onion powder
pinch of cayenne pepper
¼tsp dried oregano
1tbsp BBQ sauce
pinch each of salt and black pepper

Method

  1. Press the tofu using a tofu press or place it between two clean tea towel, lay it on a plate and put a weight on top. Leave for 15/20 minutes to drain off any liquid and firm up.
  2. Meanwhile, tip the risen dough on to a floured work surface. Knead for 1 minute to knock it back, then divide into two equals pieces. Flour each dough ball, cover with oiled cling film and leave to rest for 12-15 minutes (this will make the dough easier to roll).
  3. Preheat the oven to 250°C. Put the pizza stone or heav, large baking sheet on the middle shelf of the oven. Dust the work surface with flour.
  4. Now, make the rub and flavour the toppings. Put all the rub ingredients in a bowl and stir to combine. Cut the pressed tofu into 5mm cubes and add to the bowl. Cut the shiitake mushrooms into thin matchsticks, add to the bowl and toss well to combine.
  5. Prep the rest of the ingredients. Trim, halve and core the green pepper, then cut into 5mm thick slices. Trim and thinly slice the spring onions. Halve the cherry tomatoes. Rinse the sweetcorn, then dry it on kitchen paper.
  6. Now, build the pizzas. Roll one dough half out to make a pizza base no more than 5mm thick. Carefully roll it back on to the rolling pin and transfer to the baking sheet dusted with semolina. Liberally spread with BBQ sauce, leaving a 2.5cm rim around the edge. Top generously with smoked tofu, shiitake mushrooms, green pepper slices, cherry tomatoes, and sweetcorn. Sprinkle with spring onions and chilli flakes.
  7. Cook the pizzas. Slide the baking sheet with the topped pizza on to the hot pizza stone or baking sheet in the oven. Bake for 8-10 minutes until the crust starts to lightly brown. Prepare the second pizza. Take the first pizza out of the oven, slice and serve. Cook the second pizza.
