Make your plant-based cherry sorbet with just three ingredients. Perfect for hot summer days or pairing with chocolate puddings.

Ingredients

8 servings (my daughter – 11- had half on her own in one go)

200g granulated sugar
500g cherries, plus more to serve (optional)
1 lemon, juiced

Method

  1. Put the sugar and 270ml water in a saucepan over a low heat and stir until the sugar has dissolved. Raise the heat and simmer for 5 mins, or until the liquid has become a syrup. Set aside to cool.
  2. Put the cherries and lemon juice in a food processor and blitz until smooth. Strain through a fine sieve into a bowl. Combine with the sugar syrup.
  3. If you have an ice cream machine, pour the mixture into it.
  4. If not, pour it into a freezer-proof container and freeze for 1 hr 30 mins, then whisk with a balloon whisk or a fork to break up any ice crystals that have formed and return to the freezer. Keep mixing the sorbet once an hour for 4 hrs to break up the ice crystals. Stop mixing when firm but scoopable. Will keep it in the freezer for up to a month.
  5. Serve with extra cherries, if you like.

Plant-based Chocolate Ice Cream

It’s hot. Very hot. Very very hot. So no surprise I’ve got more trips to the freezer than my local swimming pool. We have a wide range of choices when it comes to plant-based ice cream. But like many ready-made products, you don’t really know what’s gone in. Below is a simple plant-based chocolate ice cream recipe I’ve tried. And love!

Coconut milk vanilla rice pudding

I am trying to understand why people buy tinned rice pudding when they can make their own, which is simple and tastes better.

Vegan Dark Chocolate Mousse

I’ve tried many chocolate mousse recipes with red beans, sweet potatoes, and aquafaba. This is the closest you will get from a ‘real’ chocolate mousse.

Salted Caramel Apple Crumble

A friend gave me the best crumble recipe you can get. It’s very French, it has lots of butter in it. And it’s versatile too: apple, apple and pear, apple and blackcurrant, apple and rhubarb, rhubarb, pear, etc. But, moving to a plant-based diet, I had to burry the recipe and start looking for a new one.

Vegan Sticky Toffee Pudding

A British pub classic. This is the best sticky toffee pudding, not because I’ve made it. You can replace the pecan with nuts or not add any. Same for the pear in the sticky sauce.
