This banana split overnight oats recipe is a healthy dessert-inspired breakfast that comes together fast and can be prepared the night before. It has the flavour profile of a banana split, creamy vanilla oats, fresh strawberries and banana, chocolate chips

Ingredients

1 Cup oats
1 tbsp chia seeds
1 ½ Cups almond milk
½ Cup vanilla yoghurt, or yogurt of choice
2 tbsp nut butter of choice
1-2 tbsp maple syrup
1 tsp vanilla extract
pinch of salt

Topping
½ cup strawberries, diced
2-4 tbsp chocolate chips

Method

  1. In a bowl, stir together the oats and chia seeds. Add the milk, yoghurt, nut butter, maple syrup to taste, vanilla extract, and a pinch of salt. Stir very well, cover, and refrigerate overnight or for at least 4 hours.
  2. Take the chilled oats and give them a good stir. Gently mix in the chopped strawberries and chocolate chips, saving some for topping. Don’t stir too much, or the fruit will break up.
  3. To serve, slice the banana in half and then half again lengthwise.
  4. Fill two bowls, or glasses, with the overnight oats and top with the sliced banana, the reserved strawberries, and chocolate chips.
